1. Eggplant sandwich

An eggplant sandwich is full of fiber, antioxidants and phytonutrients. It has cancer preventing antioxidants and great taste. Instead of eggplant you can use another vegetables, for example, mushrooms or zucchini.

You will need: 1 medium globe eggplant, 2 slices of whole wheat bread or 1 small 6” whole wheat wrap, 1/8 cup shredded mozzarella, 1 tablespoon olive oil, 1 piece of spinach or kale, and ½ sliced tomatoes.

Each slice of eggplant is lightly painted with olive oil using, for example, a pastry brush. Grill or bake eggplant for 5 minutes.

Then toast slices of bread. Put slices of mozzarella, eggplant, spinach, tomato and put a slice of bread on top. Relax and enjoy it!
