It is one of those marvelous dishes you can throw together when you have unexpected guests. In a Snap! Low Fat Pasta Salad is the perfect dish to bring to any potluck, BBQ or tailgate party. This recipe can be doubled to make twice as many servings and easily adapted to suit vegetarian and gluten free diets. To make In a Snap! Low Fat Pasta Salad gluten free, use gluten free pasta. Typical gluten free noodles contain quinoa, rice or corn instead of wheat flour.

Ingredients

Ingredients for In a Snap! Low Fat Pasta Salad:

  1. 1 lb dry pasta, any shape
  2. 1 c low fat salad dressing
  3. 1tbsp olive, vegetable or canola oil

Optional Ingredients:

  1. ¼ c chopped olives
  2. ¼ c chopped scallions
  3. ¼ c dried cherries
  4. ½ c low fat grated parmesan cheese
  5. ½ c crumbled low fat feta or blue cheese
  6. ½ c walnut pieces
  7. ½ c chopped fresh parsley or cilantro
  8. ½ c diced red bell pepper
  9. ½ c imitation bacon bits
  10. 1 c chopped celery
  11. 1 c chopped tomatoes
  12. 1 c sliced cucumber
  13. 1 can tuna fish, drained
  14. 1 can corn
  15. sliced hard boiled eggs

To prepare Low Fat Pasta Salad:

Take out a bowl large enough to hold all the ingredients. Prepare the pasta as directed on the bag in a large spaghetti pot. Cook the pasta for the least amount of recommend time (if the bag recommends 6-8 minutes, cook for 6 minutes). Drain the pasta in a colander and rinse it thoroughly in cold water for several minutes. To the well drained pasta add the salad dressing and toss thoroughly, coating the pasta with the dressing. Add any optional ingredients and toss lightly.
